Winemaking requires the most gentle approach

We believe that in order to make great wine it is crucial to employ the most gentle of methods in the winemaking.

After sorting the grapes in the vineyards, our grapes are checked manually cluster by cluster on a selection table in order to ensure only the highest of quality grapes are used in our wines. The wine is fermented in state of the art stainless steel tanks at controlled temperatures. Afterwards, the wine is aged in oak barrels for a period ranging between 8 – 24 months. Our state of the art equipment allows us to gently handle the wine during pressing, transferring and bottling the wine.

Our winemaking technique combines both traditional winemaking methods passed by numerous generations in Palestine and more modern scientific methods.
